Notes from the CiderMaker: Possibly the finest cider apple variety to originate in the United States, the Harrison apple dates back to the 1700s in New Jersey. It has moderate phenolic character, high natural sugar (16-18 brix) and very high acid which yields a balanced finish (rare for a single varietal). The cider is viscous and vinous.

Flavor: Orange blossom and apple peel are rounded out by honeydew. Full bodied with a light tannin.

Food Pairings: Blue cheeses; barbecue
